Welcome to our blog!  Each day we will share various things, as no two days are alike... we will try and keep it fresh for you, Monday through Fridays!

Creation of the Day:

Recipe:
 
Zucchini Bread
 3 eggs
2 cups sugar
1 cup vegetable oil
2 tsp vanilla
3 cups flour
½ cups chopped nuts
2 cups shredded zucchini (grated)
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
½ tsp nutmeg
¼ tsp cloves

Preheat oven to 325’.  Grease (not oil) bottoms or 2 9x5 or 8x4 loaf
pans.  In a large bowl, beat eggs until foarry.  Stir in sugar,
zucchini, oil, and vanilla.  Lightly spoon flour into measuring cup &
level off.  Stir in remaining ingredients.  Blend well; pour batter
into prepared pans.  Bake at 325’ for 50-60 minutes or until a tooth
pick inserted in center comes out clean.  Cool for 10 minutes and then
remove from pans.  Cool completely.  Makes 2 loaves.  Tip – Young,
tender zucchini need not be peeled or seeded.
