Sunny's Chocolate Chip Candy Cane Cookies

Ingredients

1/2 cup (1 stick) salted butter, at room temperature
2/3 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg, beaten
1 1/2 cups all-purpose flour
1/2 teaspoon pumpkin pie spice
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/3 cup bittersweet chocolate chips, gently chopped
1/4 cup (2 ounces) coarsely crushed red or green candy canes (4 to 5 candy canes)

Directions

Preheat the oven to 350 degrees F.

To a stand mixer, add the butter, brown sugar and granulated sugar. Blend on high with the paddle attachment until the sugar granules are less visible and the mixture is light and fluffy, about 4 minutes.

Scrape the sides with a rubber spatula, then add the egg and blend on low until combined, stopping to scrape the sides more to incorporate.

Prepare the dry ingredients. In a separate bowl, add the flour, pumpkin pie spice, baking powder and baking soda. Stir and toss with a spoon or fork.

Scrape the sides of the mixer bowl and, while off, add half of the flour mixture. Turn on low and mix until combined; this should only take 5 to 6 rotations of the paddle. Stop and scrape the sides again, then add the other half of the flour and mix on low the same way. Turn off the mixer.

Add the chopped chocolate chips and crushed candy canes. Turn the mixer back on low and blend until just combined; this should only take 3 to 4 rotations of the paddle.

Line 3 baking sheets with parchment paper. Scoop dough balls the size of golf balls, 1 tablespoon each, and place 3 inches apart on the baking sheet, about 8 cookies per sheet. Bake until the edges are set and the center is cooked through, but still soft, 13 to 15 minutes.

Cool the cookies for 2 to 3 minutes on the sheets. Then, holding the baking sheet over a wire cooling rack, remove the cookies from the sheet by gripping the baking sheet with one hand and the parchment paper on the opposite side with your other hand. Gently slide the parchment paper off the sheet with the cookies still on top, resting the parchment and cookies on the wire rack beneath until cool. This cookie removal/cooling trick takes coordination, so think about it before you do it and easy on the egg nog.

Chocolate Chip Cookie Dough Balls

Ingredients

Cookie Dough Balls:
2/3 cup (1 1/3 sticks) butter, at room temperature
3/4 cup granulated sugar
1/4 cup dark brown sugar, packed
1/4 cup applesauce
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup mini semisweet chocolate chips
Dipping Chocolate:
12 ounces dark chocolate wafers or semisweet chocolate chips
6 blocks chocolate-almond bark, such as CandyQuik
 

Directions

For the cookie dough balls: In an electric mixer, beat the butter, granulated sugar, brown sugar, applesauce and vanilla together until smooth. Sift the flour, baking soda and salt together, and with the mixer running, slowly add to the butter mixture. Mix in the chocolate chips. Scoop out the batter using a mini ice cream scoop and roll it into balls. Place the dough balls about an inch apart on a baking sheet lined with wax paper and transfer them to the freezer for 30 minutes to let the dough set up.

For the dipping chocolate: While the dough is chilling, melt the chocolate wafers and chocolate-almond bark together in a heavy-bottomed saucepan over low heat, stirring constantly. Remove the chilled dough balls from the freezer. Using two spoons, dip the balls one at a time in the melted chocolate, rolling them to coat fully. Returned the dough balls to the wax paper-lined baking sheet and refrigerate until set, about 30 minutes. Store in the fridge for up to 2 weeks.

Ingredients

  • 2 2/3 cups finely ground almonds
  • 1 tablespoon ground cinnamon
  • 1 teaspoon lemon zest
  • 1/3 cup egg whites
  • 1/8 teaspoon salt
  • 2 1/2 cups confectioners' sugar
  • 1 3/4 teaspoons lemon juice

Directions

  1. Stir together the almonds, cinnamon, and lemon zest until combined.
  2. Beat the egg whites and salt until soft peaks form. Slowly sift in the confectioner's sugar, continuing to beat until the mixture is stiff. Set aside 1/3 cup of the egg white mixture for the glaze. Fold in the almond mixture.
  3. Preheat oven to 325 degrees F (170 degrees C). Line the cookie sheets with parchment paper.
  4. Roll the dough to 1/4 inch thickness on a surface that has been sprinkled with confectioners' sugar. Using a 2 1/2-inch star cookie cutter, cut out the cookies and place them on the cookie sheets.
  5. To make the glaze, add the lemon juice to the reserved egg white mixture, stirring until smooth. Brush the tops of the cookies lightly with the glaze. (If the glaze starts to thicken, add a few more drops of lemon juice.)
  6. Bake for 20 to 25 minutes. When done, they will be light brown and soft in the center. Remove and cool on wire racks.

"Swedish thumbprint cookies."

Ingredients

  • 1 cup butter, softened
  • 1/2 cup white sugar
  • 2 cups sifted all-purpose flour
  • 1/2 cup any flavor fruit jam

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cream butter and sugar until light and fluffy. Add sifted flour, and mix well. Shape dough into 1-inch balls and place on cookie sheets. Imprint your thumb in the center to make a 1/2-inch indentation. Fill with your favorite preserves.
  3. Bake 15 to 20 minutes or until golden brown at the edges.

Holly Cookies

The kids love these cute little holly cookies- anything gooey and green! Their flavor is reminiscent of rice krispie treats.

Ingredients:

  • 1/2 cup (1 stick) butter
  • 30 large marshmallows
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons green food coloring
  • 3 1/2 cups corn flakes
  • red cinnamon candies

Directions:

  1. In a large pot, melt the butter and marshmallows over medium heat, stirring constantly. Add the vanilla and food coloring. Stir in the corn flakes. Grease a spoon and drop spoonfuls of the mixture onto a greased cookie sheet, or vegetable oil sprayed wax paper. Place 3 red cinnamon candies on each bunch of "holly," pressing slightly so they stick.
  2. Let sit until they have cooled and set.

Cookie Recipe
Thumbprint Cookies – easiest recipe ever

Servings: 11 dozen cookies
Ingredients

    3¾ cups all purpose flour
    1⅓ cups unsalted butter, softened (not melted)
    ¾ cup sugar
    ¼ cup orange juice
    1 egg yolk
    Preserves, flavors of your choice

Instructions

    Combine all ingredients and mix together until combined. I'm so used to creaming butter and sugar and following those steps, that putting everything together is weird to me now. So, I cream the butter and sugar, then add the egg, then slowly add the orange juice. Then I slowly add in the flour until combined. Wrap in plastic wrap and refrigerate for at least one hour.
    Preheat oven to 375 F.
    Measure out dough in level teaspoons to ensure uniform sizing.
    Roll balls in your hands to smooth, place on cookie sheet.
    Use your thumb or pointing finger to gently press the center of the cookie, forming an indent.
    Since pressing the cookie will cause it to lean to one side, after creating all the indents, I turn the cookie sheet around and repress each indent from the other side. This makes then stand back upright. Bake for ten minutes.
    Remove from oven, fill indents with preserves, lemon or lime curd, marmalade, or even apple butter.
    Return to oven and bake 5-6 minutes more, do not let them get brown. Cool on racks. Sprinkle with powdered sugar if desired.

Notes
Please note that the photos in this recipe are for larger cookies where I used a cookie scoop. This will yield FAR less cookies. If you measure level teaspoons of dough, it should yield 132 cookies (11 dozen).
